How to dice an onion without stress

Dicing means cutting food into small pieces. The goal is not chef perfection. The goal is pieces that cook at roughly the same speed.

What you are trying to learn

This technique teaches knife control, food stability and even cooking. Onions show up in loads of beginner meals, so this is one of the best early skills to practise.

Before you start

  • Use a chopping board that does not slide around.
  • Keep the onion flat-side down whenever possible.
  • Move slowly enough that your hands stay calm.
  • Do not worry if the pieces are uneven at first.

Beginner cues

Too large

The onion takes longer to soften and stays obvious in the finished food.

Too tiny

The onion can catch and burn before the rest of the pan is ready.

Good enough

Pieces are broadly similar. A few awkward bits are normal.

Use it to practise

Try this before making a simple tomato sauce, chilli, curry base, soup or tray bake. The point is to recognise how diced onion changes as it softens.
